Recipe: Peanut Butter Biscuits

I am not normally a massive peanut butter fan but there is something about peanut butter after it is baked that gives it a really nice balanced flavour that doesn't leave a film of oil in your mouth.  These cookies are so simple and work a treat when your pantry is running a little low or you have a friend pop over unexpected.  Because there is only four ingredients (can be three by simply removing the flour from the recipe) and there is no requirement to cream butter and sugar you will be able to whip these up in no time (my boyfriend even likes making these ones).

If you prefer a richer cookie simply sbstiture the caster sugar for brown sugar which will add an extra depth of flavour.  I also like using crunchy peanut butter for these cookies but I have also tried them with smooth and it works just as well.  Give these cookies a go as you may find a new appreciation for that jar of peanut butter in your cupboard.  I know that I did.  Enjoy.





Ingredients:
250 grams of peanut butter
200 grams of caster sugar
1 egg
2/3 cup of sifted self raising flour



Method:
1.    Preheat oven to 180 degrees and line a baking tray with paper;
2.    Combine all of the ingredients together in a bowl with a wooden spoon (make sure you sift the flour); and
3.    Drop teaspoonfuls of the mixture onto the baking paper and bake for eight minutes.
