Recipe: Gooey Chocolate Fudge Brownies

I love the ease of a 'one bowl' or in this case a 'one saucepan' recipe.  So this recipe is just perfect as not only do you get a rich, gooey, brownie - you also have very minimal washing up and more time to enjoy these.


If you are still trying to wiggle your way out of an Easter induced chocolate coma then this recipe will not help you!  What it might do though, is use up the left over eggs that have been tempting you all week. Just substitute the quantity of chocolate listed below for your Easter left overs and your week next week might be a little less tempting (other than devouring these brownies of course).   

The final reason why this recipe is just all too perfect is because despite how gooey, rich and decadent this brownies are; the addition of folding light sour cream into the batter really makes the brownie lighter when they are baked to the point where they basically melt in your mouth.  Now if using up left over Easter chocolate, ten minutes preparation time and very minimal washing up won't persuade you to give this recipe a go I don't know what will.  Trust me, it will make your life sweeter.



Ingredients:
150 grams of butter
300 grams dark eating chocolate
1 ½ cups of brown sugar
3 eggs
1 teaspoon of vanilla extract
¾ cup of plain flour
¾ cup of dark chocolate bits
½ cup of light sour cream

Optional: ½ cup of roasted nuts that are coarsely chopped

Method:
1.    Preheat oven to 160 degrees (fan forced). Line a square tine with baking paper;
2.    Stir butter and chocolate in a medium saucepan over low heat until smooth.  Allow to cool for ten minutes;
3.    Stir in brown sugar, eggs and vanilla extract.  Sift flour into the mixture and then add choc bits.  Mix well with a wooden spoon then fold in sour cream.  (Add nuts at this point also);
4.    Spread into the tine and bake for 40 minutes.  Cover with foil and then bake for a further 20 minutes.

Tips:                                                                                                                                                
Because these brownies are really gooey with chocolate goodness they will be a little more difficult to cut so ensure that you allow them to cool completely in the pan before removing.
Be creative and personalise your brownies by adding your favourite nuts or even try fruit like raspberries, craisins or dates.
