Recipe: Chocolate Fudge Cake


Ingredients
1 1/2 cups (330g) white sugar
1 teaspoon vanilla essence
2 eggs
1 cup (250ml) milk
1 tablespoon fresh lemon juice
1/2 cup unsweetened cocoa powder
1 cup (250ml) hot water
2 1/2 cups (300g) plain flour
1 teaspoon bicarb soda
1 teaspoon baking powder
1/2 teaspoon salt
125g butter

          
Method:           
1.     Line cake tin with baking paper and preheat oven to 180 degrees;
2.     Cream butter and sugar together in a large bowl;
3.     Add vanilla and then eggs to the mixture;
4.     In another bowl mix together flour, bicarb soda, baking powder and salt;
5.     Sour the milk by adding the lemon juice;
6.     Add sifted flour mixture alternately with soured milk to the creamed mixture;
7.     Mix sifted cocoa and hot water together and beat into batter; and
8.     Bake 30 to 35 minutes at 180 degrees (fan forced).
