Royal Icing

Ingredients:
3 cups pure icing sugar
2 egg whites
Food colouring (optional)

Method:
Whisk egg whites with an electric mixer until they come together.
Gradually add icing sugar and whisk for five minutes or until they are very light and smooth.

Tip:
Ensure that you cover the icing when you are not using it as the icing sets with air exposure.
