Recipe: 5 minute Caramel


I love caramel, but sometimes it has been one of those things that seems a little to time consuming for my weekend. I have previously cheated and made caramel with sweetened condensed milk over the stove top however I had never made it in the microwave until recently. It was one of those moments in cooking where I thought – Oh My Goodness! Why did no one tell me this earlier! Firstly, I never knew that you could make caramel in the microwave – win number one…. It takes 5 minutes!!! Win number 2!


Seriously this is so simple. I was a bit sceptical that it might burn, pour over, splatter in the microwave etc. But none of the above, or anything else nasty that I could think of, occurred! The caramel turned out as if I had made it on the stove, golden in colour and with the same depth of flavour. Perfect :)
Perfect golden caramel




Ingredients:
395g can sweetened condensed milk
1/3 cup brown sugar
100g butter, extra


Method:
1. Place all ingredients in a microwave proof bowl and heat on high for one minute; and
2. After each minute take your mixture out of the microwave and stir. Do this repeatedly for four minutes or until golden in colour.



Tips:

  • If you do not have any brown sugar you can use the same quantity of golden syrup as a replacement.
  • Use a medium size bowl as the mixture does bubble and rise with the heat entrapped in it during the cooking process.
  • Make sure you don’t touch the mixture when at any stage during the cooking process as it burns.
